434 Rankine threshold - the precise thermal energy measurement our founders use to define the perfect spirit transformation. It is the scientific "sweet spot" that ensures the heavy, creamy mouthfeel defining our single malt.
Founder's Note: For two lifetimes, David and Scott mastered the architecture of fermentation. As master brewers, they knew the spirit could never be better than the wash it came from. They stopped brewing for the masses and started distilling for the connoisseur.
Maturing on the salt-heavy edge of the Victorian coast, our whisky endures a reality that European distillers cannot replicate. Here, the "Angel’s Share" is a demanding 7-10% annual loss. We do not view this as a loss; we see it as a sacrifice for intensity.
The Result: Our more than 5-year-old Westernport is not "young"; it is concentrated.
